Peach Mango Salsa

We’ll call this salsa so that you know you can dip your chip in this and enjoy, but this “salsa” can be eaten in so many ways. It is tasty on its own, on top of fish, in tacos, add some rice and enjoy it that way. Seriously, the list goes on.

Have you ever thought about what kind of fruit person you are? You know, if someone were to ask you what your favorite fruit was, what would you tell them? The other day at the farmer’s market, a guy standing next to me looking through the apples said, “I’m definitely an apple kind of guy. What about you?” For me, that was an easy question, “I’m a peach kinda gal,” was my reply. I stuffed my bag full of 4 pounds of peaches that day. So what kinda fruit person are you?

Peach Mango Salsa

4 ripe peaches
2 ripe mangoes
3/4 cup diced tomatoes
1/2 red onion, diced
1/2 cup cilantro, chopped
juice from one lime
salt and pepper, to taste

Peel and cut up fruit into bite-sized pieces, place in medium bowl. Add diced tomatoes and cilantro. Mix together. Drizzle with lime juice, taste. If you think it needs salt and pepper add that now. Place in refrigerator for at least an hour before serving, longer if you have time. The longer this sits, the more the flavors will get to know each other. Also, my peaches and mangoes were pretty juicy so I didn’t add any other liquid; however, if you would like yours a little thinner add just a splash of olive oil.
